Encanto's location, overlooking the beach directly on Dorado Beach, is surpassed only by its popular Mediterranean Coastal Cuisine, which features fresh, locally-sourced grilled seafood and meats and classic island-inspired cocktails. 

 

Flor de Sal

Situated within the stunning coastal haven of Dorado Beach, Flor de Sal combines the rich traditions of Italian cuisine with a unique emphasis on the flavor profiles of salt.

Under the direction of Chef de Cuisine Rollyn Angela and Sous Chef Alan Avila, Flor de Sal will feature salt as a key differentiator: from the tradition of staving off bad luck by throwing salt over the shoulder to the dishes themselves. In the kitchen, the team will prepare locally sourced meat, poultry, and fish with salt (such as using Himalayan salt blocks with its signature pink hue to flavor and finish Piedmontese bone-in ribeye), while tableside presentations (such as handmade Burrata) will delight guests with an epicurean experience.

La Cocina

 “Our Market” - La Cocina Gourmet- Culinary Center provides Puerto Rican coffees, homemade gelatos and gastronomic delights while the La Cocina Culinary Center offers an array of cooking classes and demonstrations.

Appealing aromas and a compelling, contemporary façade will draw our guests into this outlet, that also provides a selection of retail items mixed with our gourmet offerings.

The bar and adjacent seating are a trendy al fresco, but elegant in design, upscale, inviting atmosphere cool & upbeat. Our guests can enjoy a great selection of hand crafted specialty cocktails, local, Asian inspired fare, while enjoying the unique sunset of Dorado Beach, while they rest their feet in the golden sand. Ordering one of the signature mojitos or daiquiris is not an option, but an obligation. The bartender performs an impromptu show, then deftly removes one of the chilled glasses and proceeds to craft what is destined to be a most memorable cocktail.

Omakase Hours of Operation 
Tucked inside Positivo Sand Bar, enjoy exotic Japanese specialties, including a delectable selection of sushi, nigiri and sashimi with fresh ingredients imported from Japan, New Zealand, Spain and Hawaii.
